Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish or line it with parchment paper.
  • In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir until evenly mixed.
  • In another bowl, whisk together the almond milk, maple syrup, vanilla extract, and melted coconut oil until well-blended.
  • Pour the wet mixture into the dry ingredients, add the brown sugar, and stir until just combined.

Baking

  • Pour the oatmeal mixture into the prepared baking dish and spread it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the oatmeal is set.

Notes
