  • 1/2 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Lemon juice Freshly squeezed
  • 1 stalk Celery Finely chopped
  • 1/2 piece Red bell pepper Finely diced
  • 2 pieces Green onion Chopped
  • to taste Salt and pepper
  • optional Chopped fresh parsley For garnish

Preparation

  • Start by gathering all your ingredients. Rinse the fresh crab meat under cold water and pick through to ensure there are no shells. Chop the celery, red bell pepper, and green onion finely.
  • In a large mixing bowl, combine the mayonnaise, Dijon mustard, and lemon juice. Mix well until fully incorporated.
  • Add the crab meat, celery, red bell pepper, and green onion to the bowl. Gently fold everything together, being careful not to break up the crab too much.
  • Taste your salad and add salt and pepper according to your preference. If you’d like, sprinkle in some chopped fresh parsley for an extra burst of flavor.
  • Cover the salad and refrigerate for at least 20 minutes to allow the flavors to meld together.
  • Serve the salad on a bed of greens, as a sandwich filling, or with crackers.
