  • 3 ripe bananas, mashed Use very ripe bananas for sweetness.
  • 1/3 cup melted butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup chocolate chips (optional) For added decadence.

Preparation

  • Preheat your oven to 350°F (175°C). Grease a standard 9×5-inch loaf pan or line it with parchment paper.
  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the melted butter, beaten egg, and vanilla extract to the mashed bananas. Stir until combined.
  • In another bowl, mix together the baking soda, salt, flour, and cocoa powder. Whisk to combine.
  • Gradually stir the dry ingredients into the wet mixture. Fold in the chocolate chips if using.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and let cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. To reheat, thaw in the refrigerator overnight and warm in the oven at 350°F for 10-15 minutes.
