  • 1 lb ground beef (or turkey for a leaner option)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color you like)
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • to taste salt and pepper

Instructions
 

Preparation

  • In a large pot over medium heat, add a splash of oil and sauté the diced onion, bell pepper, and minced garlic until they’re soft and fragrant, about 5 minutes.
  • Add the ground beef to the pot, breaking it up with a spoon. Cook until fully browned, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the chili powder, cumin, paprika, salt, and pepper, letting the spices bloom for about a minute.
  • Add the crushed tomatoes, kidney beans, and black beans to the pot. Stir everything well.
  • Bring the mixture to a simmer. Reduce the heat to low and let it simmer uncovered for 30-40 minutes, stirring occasionally.
  • Taste the chili and adjust spices or salt as needed. If you love it spicy, feel free to add some chopped jalapeños!
  • Ladle the chili into bowls and top with your favorite fixings. Enjoy!

Notes

For perfect results, allow the chili to rest for an hour before serving to let flavors deepen. Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months.
