  • 1/4 cup honey or maple syrup Adjust sweetness to taste.
  • 1/4 teaspoon salt Enhances the sweetness.
  • 1/2 teaspoon baking soda Helps the cookies rise.
  • 1/2 teaspoon cinnamon For added flavor.
  • 1/2 cup chocolate chips (or dried fruits/nuts) Customize as desired.

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the mashed bananas, almond butter, and honey. Stir until well combined.
  • Add the rolled oats, salt, baking soda, and cinnamon to the banana mixture. Mix well until all dry ingredients are fully incorporated.
  • Gently fold in the chocolate chips (or any dried fruits/nuts) until evenly distributed in the dough.
  • Use a tablespoon or cookie scoop to drop mounds of cookie dough onto the prepared baking sheet, leaving some space between them.
  • Place the cookie sheet in the preheated oven and bake for 12-15 minutes, or until the edges are golden and the center looks set.
  • Allow cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes
