  • 8 ounces orzo pasta Cooked al dente for the best texture.
  • 8 ounces feta cheese Block feta is preferred for baking.
  • 1 medium onion, diced Adds sweetness and depth.
  • 2 cloves garlic, minced A must for flavor.
  • 1 cup cherry tomatoes They burst with flavor when roasted.
  • 1/4 cup extra virgin olive oil Adds richness.
  • 1/2 teaspoon dried oregano A nice herbaceous note.
  • Fresh basil or parsley for garnish For a fresh finish.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Bring a pot of salted water to boil. Cook the orzo according to package instructions until al dente. Drain and set aside.
  • In a large, oven-safe baking dish, combine the tomatoes, diced onion, and minced garlic. Drizzle with olive oil, salt, and pepper. Toss everything to coat.
  • Make a little well in the center of the vegetables and place the block of feta here. Sprinkle the dried oregano on top of both the feta and the veggies.
  • Place the dish in the preheated oven and bake for about 20 minutes or until the feta is soft and slightly golden.
  • Remove the dish from the oven, then stir in the cooked orzo until well combined. Taste and adjust the seasoning if needed. Garnish with fresh basil or parsley before serving.

Notes

Use high-quality block feta cheese for the best texture when baked. Feel free to swap the cherry tomatoes for bell peppers or spinach.
