  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients

  • 0.5 cup granulated sugar
  • 0.25 cup light brown sugar, packed
  • 1 large egg
  • 0.5 cup milk (almond or oat milk optional)
  • 0.33 cup vegetable oil
  • 1 teaspoon vanilla extract

Fruits

  • 1 large apple, peeled and diced (like Granny Smith or Honeycrisp) For added flavor and moisture

Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  • In another bowl, mix the granulated sugar, brown sugar, and egg until combined. Add the milk, oil, and vanilla; stir until well blended.
  • Add the wet mixture to the dry ingredients, and gently fold until just mixed. Be careful not to overmix!
  • Fold in the diced apple until evenly distributed throughout the batter.

Baking

  • Spoon the batter into the prepared muffin cups, filling each one about ¾ full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 5 minutes before transferring the muffins to a wire rack to cool completely.

Notes

Use fresh apples for a moist texture. Avoid overmixing the batter. Consider adding a pinch of nutmeg for extra flavor. Store in an airtight container for up to three days, or freeze for up to three months.
