Cuisine Mexican
- 1 pound ground beef
- 1 can (15 oz) enchilada sauce
- 2 cups shredded cheddar cheese or more, if desired
- 10-12 corn tortillas
- 1 medium onion chopped
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- salt and pepper to taste
- fresh cilantro for garnish, optional
In a skillet over medium heat, cook the chopped onion until translucent. Add the ground beef, breaking it apart with a spatula, and cook until browned. Drain excess fat, then stir in the cumin, garlic powder, and salt & pepper.
In a separate dry skillet, heat the corn tortillas until they are pliable (about 15-20 seconds per side). This prevents them from tearing when rolling.
Take a tortilla, add a spoonful of the beef mixture and some shredded cheese, and roll it tightly. Place the rolled enchiladas seam-side down in a greased baking dish.
Pour enchilada sauce evenly over the rolled tortillas, then top with remaining cheese.
Preheat your oven to 350°F (175°C) and bake for about 20 minutes, or until the cheese is melted and bubbly.
Remove from the oven, garnish with chopped cilantro, and serve hot!
