  • 2 cups shredded cooked chicken grilled or rotisserie works great
  • 1/2 cup BBQ sauce your favorite brand
  • 4 slices bread sourdough or Texas toast for extra thickness
  • 1 cup shredded cheese sharp cheddar or a blend for maximum flavor
  • 2 tablespoons butter for that perfect golden crust

Instructions
 

Preparation

  • In a mixing bowl, combine shredded chicken with BBQ sauce. Stir until the chicken is fully coated and set aside.
  • Spread a tablespoon of butter on one side of each slice of bread.

Assembly

  • Place one slice of bread, buttered side down, in a skillet over medium heat.
  • Layer half of the shredded cheese on top, followed by the BBQ chicken mixture, and top with the remaining cheese.
  • Cover with the second slice of bread, buttered side up.

Cooking

  • Let it cook for about 3-4 minutes or until golden brown.
  • Carefully flip the sandwich using a spatula and cook for another 3-4 minutes until the other side is also golden brown and the cheese has melted.

Serving

  • Remove from the skillet, slice in half, and serve hot.

Notes
