  • 3 pieces ripe bananas, mashed Use super ripe bananas for maximum sweetness and moisture.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda Helps the bread to rise.
  • a pinch salt
  • 3/4 cup sugar Can be reduced to 1/2 cup for less sweetness.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1/2 cup peanut butter (creamy or chunky) Your choice!
  • 1 cup all-purpose flour Be careful not to over-mix.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  • Add baking soda and salt, mixing well.
  • Stir in the sugar, beaten egg, and vanilla extract. Next, fold in the peanut butter until thoroughly combined.
  • Slowly add the flour, mixing just until incorporated.
  • Pour the batter into the prepared loaf pan and spread it evenly.

Baking

  • Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

You can customize the recipe by adding chocolate chips or nuts. Store leftover banana bread in an airtight container for up to three days at room temperature or a week in the fridge.
