  • 3 ripe bananas, mashed The riper, the better! Look for bananas with plenty of brown spots.
  • 1/2 cup melted coconut oil (or vegetable oil) Can substitute with applesauce for a lower-fat option.
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup all-purpose flour Can substitute with whole wheat flour for a healthier alternative.
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Extras

  • 1/2 cup chocolate chips Optional for extra flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper for easy removal.
  • In a large mixing bowl, combine the mashed bananas, melted coconut oil, brown sugar, egg, and vanilla extract. Mix until smooth.
  • In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring until just combined.
  • Fold in the chocolate chips if desired.

Baking

  • Pour the batter into your prepared dish and spread evenly.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cooling and Serving

  • Allow the brownies to cool in the pan for at least 10 minutes before slicing into squares.

Notes
