  • 4 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup bell peppers, chopped (red and green)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup sweet and sour sauce (store-bought or homemade)
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 375°F (190°C) to ensure the chicken cooks evenly.
  • In a large bowl, combine the chicken pieces, soy sauce, and a pinch of salt and pepper. Let them marinate for about 15 minutes while you prep the other ingredients.
  • In another bowl, combine the sweet and sour sauce with cornstarch. This will help thicken the sauce during baking.
  • In a large baking dish, combine the marinated chicken, chopped bell peppers, pineapple chunks, and the sweet and sour sauce mixture. Toss everything together to ensure the chicken and veggies are well-coated.
  • Drizzle olive oil over the top and give it another gentle toss. Cover with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the sauce is bubbly and golden.
  • Let it cool for a few minutes before serving. This dish is perfect over steamed rice or noodles!

Notes

Feel free to mix and match the veggies! Broccoli, snap peas, or even carrots can make delightful additions. For deeper flavor, marinate the chicken longer—up to an hour if you have the time!
