  • 1 lb large shrimp (peeled and deveined)
  • 1 cup breadcrumbs (preferably whole wheat) For added flavor
  • 1/2 cup chopped bell peppers red or green
  • 1/2 cup chopped onions
  • 2 cloves garlic (minced)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup milk or any plant-based alternative
  • 1/4 cup melted butter or olive oil for a lighter option
  • 1 tsp lemon juice
  • to taste Salt and pepper
  • 1/2 tsp paprika for a hint of heat
  • 1/2 cup shredded cheese optional, use a Halal-certified option

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine the peeled and deveined shrimp, adding salt, pepper, and lemon juice. Set aside.
  • In another bowl, mix the breadcrumbs, bell peppers, onions, garlic, parsley, melted butter, milk, and paprika until moistened but not soggy!
  • In a baking dish, layer half of the shrimp on the bottom. Evenly spread the stuffing mixture on top, then add the remaining shrimp.

Baking

  • If you're using cheese, sprinkle it over the top.
  • Cover the dish with foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the shrimp are fully cooked, and the top is golden.

Serving

  • Let it cool slightly before serving to allow the flavors to meld. Enjoy this delightful dish with your favorite side salad or garlic bread!

Notes

For substitutions, you can swap out shrimp for other seafood like scallops or crab meat, ensuring they are Halal-friendly. Keep an eye on the shrimp while cooking to prevent overcooking; they should be pink and opaque when done. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat at 350°F (175°C) until warmed through.
