  • 10 ounces Fresh spinach, stems removed
  • 8 ounces Cream cheese, softened
  • 1 cup Sour cream
  • 2 cups Shredded cheese (blend of mozzarella and cheddar)
  • 2 large Eggs
  • 1 teaspoon Garlic powder
  • Salt and pepper, to taste
  • Breadcrumbs, optional, for topping

Preparation

  • Preheat your oven to 350°F (175°C).
  • If using fresh spinach, sauté it in a pan over medium heat until wilted. Set aside to cool slightly and squeeze out excess moisture.
  • In a large mixing bowl, combine softened cream cheese, sour cream, shredded cheese, eggs, garlic powder, salt, and pepper. Mix until smooth.
  • Fold the cooked spinach into the cheese mixture.
  • Pour the mixture into a greased 9x9-inch baking dish and spread evenly.
  • Optionally, sprinkle breadcrumbs on top.

Baking

  • Bake for 25 to 30 minutes, until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Feel free to add other vegetables like mushrooms or peppers, and experiment with different cheeses. Make ahead and adjust baking time if chilled. Store leftovers in an airtight container for up to 3 days.
