  • 2 pieces Mahi Mahi fillets (about 6 ounces each) Fillets should be fresh, not frozen.
  • 2 tablespoons olive oil For greasing and seasoning.
  • 2 tablespoons lemon juice Freshly squeezed is preferred.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • as needed Lemon slices for garnish
  • as needed Fresh parsley, chopped (for garnish)

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a baking dish with a drizzle of olive oil.
  • In a small bowl, whisk together olive oil, lemon juice, garlic powder, onion powder, paprika, salt, and pepper.
  • Place the Mahi Mahi fillets in the prepared baking dish and pour the seasoning mixture over them.

Cooking

  • Bake in the preheated oven for 20-25 minutes until the fish is opaque and flakes easily with a fork.
  • Remove from the oven and garnish with fresh parsley and lemon slices.
  • Serve hot.

Notes

Best with fresh Mahi Mahi fillets. Feel free to experiment with different herbs or spices for unique flavors. Don’t overbake; check for doneness around the 20-minute mark.
