Main Ingredients

  • 200 grams Feta Cheese block-style for baking
  • 2 cups Cherry Tomatoes halved
  • 4 cloves Garlic minced
  • 2 tablespoons Olive Oil
  • 300 grams Pasta use your favorite kind—spaghetti or penne work well
  • to taste Salt
  • to taste Black Pepper freshly ground
  • Fresh Basil for garnish (optional)
  • Crushed Red Pepper Flakes for a kick (optional)

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, combine halved cherry tomatoes, minced garlic, olive oil, salt, and black pepper. Toss until well-coated.
  • Create a space in the middle of your tomato mixture and place the block of feta in that space. Drizzle a little more olive oil on top and sprinkle some black pepper.

Baking

  • Bake in the preheated oven for 25 minutes, until the feta is golden brown and the tomatoes are bursting.

Cooking Pasta

  • Meanwhile, cook your pasta according to the package instructions until al dente. Drain and set aside.

Combining

  • Once baked, remove the dish from the oven. Use a fork to mash the feta and mix it with the tomatoes until creamy. Toss in the cooked pasta and stir until well coated.

Serving

  • Garnish with fresh basil and red pepper flakes if desired. Enjoy!

Notes

You can substitute goat cheese for a creamier taste. Keep an eye on the feta while it’s baking, and you can add in vegetables like spinach or zucchini for extra nutrition.
