Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup milk (or preferred non-dairy alternative)
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

  • 1 cup fresh or frozen blueberries If using frozen blueberries, do not thaw.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a donut pan or use donut liners.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Stir until well mixed.
  • In another bowl, whisk together the milk, vegetable oil, and vanilla extract until combined.
  • Pour the wet ingredients into the dry mixture and gently stir until just combined. Be careful not to overmix!
  • Fold in the blueberries.
  • Using a piping bag or a spoon, fill each donut well about two-thirds full with batter.

Baking

  • Bake in the preheated oven for about 10-12 minutes or until a toothpick inserted comes out clean.
  • Remove from the oven and allow to cool in the pan for a few minutes before transferring to a wire rack.
  • Serve warm or allow them to cool completely before storing.

Notes

Don’t overmix the batter to ensure your donuts remain light and fluffy. Store baked donuts in an airtight container at room temperature for up to 2 days or refrigerate for up to a week. Reheat in the microwave for 10-15 seconds or in a preheated oven at 350°F (175°C) for 5 minutes.
