Preparation

  • Start by peeling and dicing your potatoes into bite-sized pieces.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the cumin and mustard seeds and allow them to sizzle until they start popping.
  • Carefully add the diced potatoes to the skillet and stir well to coat them in the spiced oil.
  • Sprinkle in the chili powder, turmeric, salt, and pepper, ensuring the potatoes are evenly coated.
  • Reduce the heat to low, cover the skillet, and let the potatoes cook for about 15-20 minutes, stirring occasionally.
  • Once cooked, remove from heat, garnish with fresh cilantro, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet for best results. These potatoes freeze well for up to a month.
