Ingredients
  

For the Marinade

  • ½ cup soy sauce
  • ½ cup pineapple juice Preferably fresh
  • ¼ cup brown sugar Packed
  • 2 tablespoons fresh ginger (grated) Use fresh for best flavor
  • 3 cloves garlic (minced) Use fresh for best flavor
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

For the Chicken

  • 4 pieces boneless, skinless chicken thighs

For Garnish

  • to taste green onions Chopped, for garnish
  • to taste pineapple slices For grilling

Instructions
 

Preparation

  • In a bowl, whisk together soy sauce, pineapple juice, brown sugar, ginger, garlic, rice vinegar, and sesame oil until sugar is dissolved.
  • Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag, removing excess air, and refrigerate for at least 30 minutes, or longer for more flavor.

Grilling

  • Preheat the grill to medium-high.
  • Remove chicken from the marinade and let excess drip off. Place chicken on the grill and cook for about 5-7 minutes on each side, turning frequently.
  • In the last few minutes of grilling, toss pineapple slices on the grill until they’re caramelized and have grill marks, about 2-3 minutes each side.
  • Once chicken reaches an internal temperature of 165°F, remove from the grill and let rest for a few minutes.
  • Garnish with chopped green onions and serve with the grilled pineapple.

Notes

For best flavor, marinate the chicken overnight. Make sure to check for doneness with a meat thermometer to avoid overcooking.
