Preparation

  • Lay each beef slice flat and gently pound to an even thickness. Season with salt and pepper.
  • Spread about 1 tablespoon of Dijon mustard on each slice of beef, adding a handful of chopped onions and a few slices of pickles.
  • Carefully roll each slice tightly from one end, securing with kitchen twine or toothpicks.

Cooking

  • Heat vegetable oil in a large skillet over medium-high heat. Sear the rouladen rolls until browned on all sides, then set aside.
  • In the same skillet, whisk in flour and cook for a minute before stirring in beef broth to create a sauce. Scrape the browned bits from the bottom of the skillet.
  • Return the beef rolls to the skillet, cover, and simmer for about 1.5 to 2 hours until tender.

Serving

  • Remove rouladen from the skillet and let rest briefly. Slice and serve with sauce drizzled on top, garnished with fresh parsley if desired.

Notes

For best results, choose high-quality beef and tightly roll to keep fillings inside. Leftovers can be stored for up to 3 days or frozen for up to 2 months.
