  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 apples, peeled and chopped
  • 1 cup apple cider
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Fresh thyme for garnish

Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef short ribs with salt and pepper.
  • Sear the ribs on all sides until golden brown, about 3-4 minutes per side. Remove them from the pot and set aside.
  • In the same pot, add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  • Stir in the chopped apples, apple cider, and beef broth. Scrape the bottom of the pot to release any browned bits.
  • Return the short ribs to the pot. Add brown sugar, cinnamon, and more salt and pepper to taste.

Braising

  • Cover the pot and let it simmer over low heat for about 2.5 to 3 hours, or until the ribs are tender and falling off the bone.
  • Alternatively, transfer the pot to a preheated oven at 300°F (150°C) for the same duration.

Serving

  • Before serving, sprinkle fresh thyme over the top. Serve the short ribs with the sauce drizzled over them, and enjoy!

Notes

For substitutions, if you can’t find beef short ribs, consider using lamb shanks or chicken thighs. It's essential to avoid crowding the ribs while searing for achieving a beautiful crust. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months. Reheat in the oven or stovetop with added beef broth.
