Ingredients
  

Dry Ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 pinch salt

Wet Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil or butter, melted
  • 1 teaspoon vanilla extract

Mix-Ins (Optional)

  • 1/2 cup chopped apples Use fresh apples for best flavor.
  • 1/4 cup chopped walnuts Optional.
  • 1/4 cup raisins Optional.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine rolled oats, whole wheat flour, brown sugar, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk together applesauce, melted coconut oil or butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the chopped apples, walnuts, and raisins if using.
  • Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Best served warm. You can drizzle honey or maple syrup for extra sweetness. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
