  • 2 cups milk (or dairy-free alternative) Almond milk or oat milk can be used for a dairy-free option.
  • 2 large apples, peeled and diced
  • 1/2 cup honey or maple syrup Brown sugar can be swapped in for sweetness.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup chopped walnuts or pecans (optional) Add for extra crunch if desired.

Preparation

  • Preheat the oven: Set your oven to 350°F (175°C) and let it warm up while you prepare the ingredients.
  • Prepare the dish: Grease a baking dish with some olive oil or butter to prevent sticking.
  • Mix the dry ingredients: In a large mixing bowl, combine the oats, baking powder, salt, cinnamon, and nutmeg. Stir well to ensure even distribution of the spices.
  • Mix the wet ingredients: In another bowl, whisk together the milk, honey or maple syrup, and vanilla extract.
  • Combine: Pour the wet ingredients into the dry mixture and stir until everything is well combined. Fold in the diced apples and nuts if using.
  • Pour into baking dish: Transfer the entire mixture into the greased baking dish, spreading it evenly.
  • Bake: Place the dish in the preheated oven and bake for about 30 minutes or until the top is golden and the oats are set.
  • Serve: Let the baked oatmeal cool for a few minutes before serving. Feel free to top with additional fruit, nuts, or a swirl of honey!

Notes

For storage, refrigerate for up to 5 days or freeze individual portions for up to 3 months. Reheat in the microwave or oven for best results.
