Apple Crumble Cheesecake

- Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons melted butter
- Cheesecake Filling
- 3 8-ounce packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- Apple Topping
- 2 cups peeled and diced apples
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- Crumble Topping
- 1/2 cup flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup cold butter
Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
Combine crust ingredients, press into the pan, and bake for 10 minutes. Cool.
Beat cream cheese and sugar until smooth. Add eggs and vanilla. Pour over the crust.
Cook apples with sugar, cinnamon, and lemon juice. Spread over the cheesecake.
Combine crumble ingredients and sprinkle over the apples.
Bake for 50-60 minutes, cool, and refrigerate for at least 4 hours.
