  • 2 cups Kodiak Cakes Mix Use original or any flavor you prefer
  • ½ cup Brown Sugar For that lovely caramel flavor
  • 2 teaspoons Cinnamon Or to taste
  • 1 teaspoon Baking Powder To help it rise
  • ½ teaspoon Salt To enhance flavors

Wet Ingredients

  • ½ cup Unsweetened Applesauce For moisture
  • 1 cup Grated Apples Peeled and cored, about 1 large apple
  • 2 large Eggs Ensure they are at room temperature
  • 1 teaspoon Vanilla Extract Halal-friendly

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with cooking spray or a light coating of oil.
  • In a large bowl, combine the Kodiak Cakes mix, brown sugar, cinnamon, baking powder, and salt. Stir with a whisk until well combined.
  • In a separate bowl, beat the eggs. Add the applesauce, grated apples, and vanilla extract, and mix until thoroughly combined.
  • Gradually add the wet ingredients to the dry mixture and fold gently until just mixed. Do not over-mix to maintain that lovely fluffy texture.
  • Transfer the batter into the prepared loaf pan, spreading it evenly.

Baking

  • Place the loaf in the preheated oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Once baked, remove from the oven, let it cool in the pan for about 10 minutes, and then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, consider adding more apples or nuts. Store in an airtight container in the refrigerator for up to one week, or freeze for 2-3 months.
