Ingredients
  

Dry Ingredients

  • 2 cups rolled oats
  • 1/2 cup brown sugar Can be substituted with coconut sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup grated apple (about 1 medium apple)
  • 1/2 cup applesauce
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional) Can be added for crunch

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, allowing extra paper to hang over the sides for easy removal.

Mix Dry Ingredients

  • In a medium bowl, combine the rolled oats, cinnamon, nutmeg, and salt. Stir gently to mix the dry ingredients evenly.

Combine Wet Ingredients

  • In another bowl, mix the brown sugar and applesauce until well blended. Add the grated apple and vanilla extract, stirring to incorporate all the flavors together.

Combine Both Mixtures

  • Gradually add the dry oat mixture to the wet mixture, stirring until no dry oats remain. For a bit of crunch, fold in the chopped nuts if using.

Bake

  • Spread the mixture evenly in the prepared baking pan, using a spatula to press down and create a smooth top. Bake in the preheated oven for about 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.

Cool and Cut

  • Once baked, let the bars cool in the pan for 10 minutes before using the overhanging parchment paper to lift them out onto a cutting board. Slice into squares or bars.

Notes
