Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup apple cider fresh if possible
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs

Optional Add-ins

  • 1/4 cup chopped walnuts or pecans for added crunch (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.
  • In another bowl, mix the vegetable oil, granulated sugar, brown sugar, and eggs until smooth. Gradually stir in the apple cider until fully incorporated.
  • Slowly add the dry mixture to the wet mixture, stirring gently until just combined. Be cautious not to overmix; a few lumps are okay.
  • If you’re adding nuts, fold them in at this stage.

Baking

  • Pour the batter into a greased loaf pan and bake for about 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and serve!

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, wrap in plastic wrap and freeze for up to 2 months. To reheat, warm a slice in the microwave for 10-15 seconds or toast lightly.
