  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated Fresh
  • 1 teaspoon ground turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 pound chicken breast, diced (preferably halal)

Broth and Vegetables

  • 4 cups chicken broth (halal-certified)
  • 2 cups carrots, sliced
  • 2 cups kale or spinach
  • to taste salt and pepper
  • 1 whole lime, juiced For brightness
  • to taste fresh cilantro, for garnish

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic, grated ginger, ground turmeric, cumin, and coriander. Let this cook for about 1 minute until fragrant.
  • Add the diced chicken breast to the pot, season with salt and pepper, and cook until the chicken is browned on all sides, about 5-7 minutes.
  • Add the chicken broth and bring it to a gentle simmer.
  • Toss in the sliced carrots and let the soup simmer for another 10 minutes until the carrots are tender.
  • Add the kale or spinach for an extra nutrient boost. Simmer for an additional 2-3 minutes until the greens are wilted.
  • Squeeze in the juice of one lime for a touch of brightness, and stir well.
  • Serve hot, garnished with fresh cilantro.

Notes

Ensure all ingredients are halal-certified. For added flavor, let the broth come to a gentle simmer. If you're out of chicken, consider using chickpeas for a vegetarian option.
