  • 1 pie crust 1 pre-made pie crust (store-bought or homemade) Use a 9-inch pie crust.
  • 4 cups 4 cups fresh strawberries, hulled and halved Select ripe, bright red strawberries.
  • 1 cup 1 cup granulated sugar Adjust according to strawberry sweetness.
  • 2 tablespoons 2 tablespoons cornstarch Helps to thicken the filling.
  • 1 teaspoon 1 teaspoon vanilla extract Enhances flavor.
  • 2 tablespoons 2 tablespoons lemon juice Adds a touch of acidity.
  • 1 serving Whipped cream or ice cream for serving (optional) Enhances the pie experience.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine halved strawberries, sugar, lemon juice, cornstarch, and vanilla extract. Gently stir to coat the strawberries and let sit for about 10 minutes.
  • Place the pie crust in a 9-inch pie dish and pour the strawberry mixture into it, spreading evenly.
  • Bake for 25 to 30 minutes or until the filling is bubbly and the crust is golden brown.
  • Allow the pie to cool for at least an hour at room temperature.
  • Slice and serve chilled or at room temperature with whipped cream or ice cream if desired.

Notes

Store leftover pie covered in the refrigerator for 3-4 days. Reheat slices in the microwave for 20-30 seconds.
