Ingredients
  

Main Ingredients

  • 1 pound ground beef Use lean ground beef to reduce grease
  • 1 cup bread crumbs
  • 1 small onion, chopped
  • 1 teaspoon garlic powder
  • 1 large egg

Sauce and Extras

  • 1 cup beef broth
  • 1 can cream of mushroom soup Substitute with low-fat or homemade option if desired
  • Salt and pepper to taste
  • 1 cup frozen mixed vegetables (optional)
  • Fresh parsley for garnish (optional) Garnish before serving

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground beef, bread crumbs, chopped onion, garlic powder, and egg. Season with salt and pepper. Mix until just combined.
  • Shape the mixture into four equal patties.
  • Heat a skillet over medium-high heat and sear both sides of the patties until browned, about 3-4 minutes per side.

Assembly and Baking

  • In a separate bowl, whisk together the beef broth and cream of mushroom soup.
  • Spread half of the soup mixture on the bottom of a baking dish. Place the browned patties on top.
  • Pour the remaining soup mixture over the patties and add the frozen vegetables if using.
  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Uncover and bake for an additional 15 minutes, until bubbly and heated through.
  • Let it cool slightly before serving. Garnish with fresh parsley if desired.

Notes

To store leftovers, keep them in an airtight container in the refrigerator for up to three days. Can also be frozen for up to three months. Thaw overnight in the refrigerator before reheating at 350°F (175°C) until heated through.
