Ingredients

Fruits and Mix-ins

  • 1 cup miniature marshmallows
  • 1 cup canned mandarin oranges, drained
  • 1 cup crushed pineapple, drained
  • 1 cup shredded coconut (sweetened)

Whipped Cream Mixture

  • 1 cup heavy whipping cream
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract

Instructions

Preparation

  • Gather all your fruits and prepare them by draining the canned foods. In a mixing bowl, combine the drained mandarin oranges, crushed pineapple, marshmallows, and shredded coconut.
  • In a separate bowl, whisk the heavy whipping cream, sugar, and vanilla extract together until soft peaks form. You want the mixture to be fluffy but still smooth enough to blend seamlessly with the fruit.
  • Carefully fold the whipped cream into the fruit mixture. Be gentle to avoid crushing the fruit while incorporating the cream evenly.
  • Once mixed, transfer the Ambrosia Salad to a serving bowl. Cover it with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld beautifully.
  • Once chilled, give it a light stir before serving. Garnish with extra coconut or a sprinkle of maraschino cherries for an added pop of color.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Texture may become softer over time. Can be made a day in advance and kept covered in the fridge until ready to serve. Adjust sweetness based on fruit sweetness.
