Ingredients
  

Salad Base

  • 2 cups mixed greens (spinach, arugula, and romaine) Use the freshest greens available.
  • 1 cup cherry tomatoes, halved Alternatively, use grape tomatoes.
  • 1 small cucumber, diced Feel free to peel if desired.
  • ½ bell pepper diced (any color) Choose your favorite color for sweetness.
  • ¼ cup red onion, thinly sliced Soaking in water can reduce sharpness if desired.
  • ¼ cup feta cheese (optional) Could substitute with another cheese.
  • ¼ cup olives (optional) Choose your preferred type.

Dressing

  • 1 each juice of 1 lemon Freshly squeezed for the best flavor.
  • 2–3 tablespoons olive oil Adjust based on taste preferences.
  • to taste salt and pepper Add seasoning based on personal preference.

Garnish

  • to taste fresh herbs (basil and parsley), chopped These enhance the flavor and add freshness.

Preparation

  • Start by rinsing the mixed greens under cool water. Once cleaned, gently pat them dry or use a salad spinner.
  • Dice your cucumber and bell pepper, slice the cherry tomatoes in half, and thinly slice the red onion. You can customize the vegetables as per your preference!

Assembly

  • In a large mixing bowl, combine the greens, chopped veggies, feta cheese, and olives.
  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour this dressing over the salad and toss everything gently to coat.
  • Finally, sprinkle freshly chopped herbs over the top for that extra burst of flavor.

Serving

  • Transfer to a serving bowl and enjoy immediately or keep it refrigerated until you’re ready to serve!

Notes

For added proteins, consider adding in chickpeas or grilled shrimp. Store leftovers in an airtight container in the refrigerator for 1-2 days. Best to add dressing right before serving to maintain crunchiness.
