Ingredients
  

Crab Brulee Mixture

  • 2 cups fresh lump crab meat Opt for the freshest crab meat available.
  • 1 cup heavy cream
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped green onions
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • Salt and freshly cracked black pepper, to taste
  • 1/4 cup brown sugar (for caramelizing)

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the crab meat, heavy cream, mayonnaise, green onions, eggs, Dijon mustard, salt, and black pepper. Mix well until everything is evenly blended.
  • Spoon the crab mixture into individual ramekins or a baking dish, filling them about three-quarters full.

Cooking

  • Place the ramekins or dish in a roasting pan. Fill the pan with hot water until it reaches halfway up the sides of the ramekins. Bake for about 20 to 25 minutes, or until set and slightly golden.
  • Let it cool slightly on a wire rack after baking.
  • Once they’re cooled, sprinkle an even layer of brown sugar over the top of each ramekin.
  • Carefully caramelize the sugar using a kitchen torch until beautifully browned and bubbly. Alternatively, place the ramekins under the broiler for a minute, keeping a close eye on them.
  • Allow the brulees to cool for a few minutes before serving.

Notes

Serve with light salad greens tossed in a citrus vinaigrette and crusty bread. For a drink pairing, a chilled glass of Sauvignon Blanc complements the dish beautifully. Fresh crab meat is essential for the best flavor. You can also experiment with toppings for added flair.
