Ingredients
  

For the Phyllo Base

  • 8 sheets Phyllo dough
  • ½ cup Unsalted butter, melted For brushing the phyllo layers

For the Cheesecake Filling

  • 16 oz Cream cheese, softened
  • 1 cup Granulated sugar
  • 1 tsp Vanilla extract
  • ½ cup Sour cream
  • 3 large Eggs
  • ½ cup Finely chopped nuts (like walnuts or pistachios)
  • 1 tsp Ground cinnamon
  • ½ cup Honey For drizzling

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a baking pan (preferably springform), layer the phyllo dough, brushing each sheet with melted butter before adding the next. Create about 5 layers for a sturdy base. Save the remaining phyllo for later.
  • In a large bowl, combine softened cream cheese, sugar, and vanilla extract. Mix until smooth and creamy.
  • Incorporate sour cream and eggs into the mixture, beating just until blended.
  • Gently fold in the chopped nuts and ground cinnamon.
  • Spoon the cream cheese mixture evenly over the phyllo base in the pan.
  • Layer more phyllo dough over the cheesecake filling, brushing each layer with melted butter.

Baking

  • Bake in the preheated oven for 45-55 minutes, or until the center is set.
  • While the cheesecake is cooling, combine honey with a little warm water to thin it out.
  • Once cooled, drizzle honey over the top and garnish with nuts. Slice, serve, and enjoy!

Notes

Keep the phyllo dough covered with a damp cloth while preparing to prevent drying out. Avoid over-mixing the cream cheese filling. Allow the cheesecake to cool to room temperature before refrigerating; this helps the flavors meld beautifully.
