Ingredients
  

Cookie Base

  • 1 ½ cups almond flour
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened should be at room temperature
  • 1 large egg should be at room temperature
  • 1 tsp almond extract

Toppings

  • ½ cup sliced almonds for topping
  • powdered sugar for dusting, optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (around 2-3 minutes).
  • Beat in the egg and almond extract until well combined.
  • Gradually add the dry mixture to the wet mixture, stirring until a dough forms.
  • Using a tablespoon, scoop out the dough and roll it into small balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
  • Press a few sliced almonds on top of each cookie.

Baking

  • Bake the cookies for 10-12 minutes or until they are lightly golden.
  • Allow them to cool on the baking sheets for a few minutes before transferring them to a wire rack.
  • Once completely cooled, lightly dust the cookies with powdered sugar for that lovely finishing touch.

Notes

Use room temperature ingredients for a smoother mixture. Chill the dough for 30 minutes for an even softer cookie. Watch the baking time to ensure they are lightly golden but not brown.
