Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine almond flour, peanut butter, honey or maple syrup, baking soda, vanilla extract, and a pinch of salt. Stir until well incorporated and a dough forms.
  • Using a tablespoon or cookie scoop, place dollops of dough on your prepared baking sheet, ensuring they are spaced about 2 inches apart.
  • Slightly press down on each cookie with a fork, creating a crosshatch pattern on top.
  • Bake in the preheated oven for 10-12 minutes until golden. Remove them from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For variations, consider adding chocolate chips or adjusting the sweetness level. Store in an airtight container for up to five days or refrigerate for a week.
