Ingredients
  

Dry Ingredients

  • 2 cups almond flour
  • 1 cup powdered sugar
  • 1/4 teaspoon salt

Wet Ingredients

  • 2 large egg whites Room temperature for better volume.
  • 1 teaspoon almond extract

Optional Garnish

  • to taste sliced almonds For garnishing.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the almond flour, powdered sugar, and salt. Stir until well mixed.
  • In a separate bowl, whisk the egg whites until they form soft peaks.
  • Gently fold the egg whites and almond extract into the dry mixture, being careful not to deflate the egg whites.
  • Use a spoon or cookie scoop to drop round dollops of the batter onto the prepared baking sheet, spacing them a couple of inches apart.
  • Sprinkle sliced almonds on top for an added crunch.

Baking

  • Bake for 12-15 minutes, or until the edges turn slightly golden.
  • Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. Refrigerate for longer storage. To reheat, warm in a gentle oven.
