  • 1 pound gnocchi (store-bought or homemade)
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1 cup heavy cream Can substitute with coconut cream for a lighter version
  • 1/2 cup grated Parmesan cheese Use Halal-friendly Parmesan if needed
  • Salt and pepper to taste
  • 1 tsp garlic powder (optional)
  • 1 tsp Italian seasoning (optional)

Preparation

  • Preheat your air fryer to 400°F (200°C) to ensure the gnocchi will get that perfect crispness.

Cooking

  • Toss the gnocchi into the air fryer basket in a single layer. Air fry for about 8-10 minutes, shaking the basket halfway through, until they are golden brown and crispy.
  • In a medium pot over medium heat, combine the pumpkin puree, heavy cream, and seasonings. Stir continuously until heated through and smooth. Add in half of the Parmesan cheese, stirring until melted.
  • Once the gnocchi are done, transfer them to the pot with the creamy pumpkin sauce. Toss gently to coat all the gnocchi with the sauce.
  • Plate the gnocchi and sprinkle the remaining Parmesan cheese on top. Enjoy your warm, comforting dish!

Notes

For better results, avoid overcrowding the air fryer basket. Store leftovers in an airtight container for up to 3 days. Reheat in the air fryer at 350°F (175°C) for about 5 minutes for optimal crispness.
