Preparation

  • Wash the eggplant thoroughly and slice it into rounds about 1/2 inch thick.
  • Sprinkle a little salt on the slices and let them sit for about 15 minutes to draw out excess moisture and bitterness. Pat them dry with a paper towel.

Seasoning

  • In a mixing bowl, toss the eggplant slices with olive oil, salt, black pepper, garlic powder, and Italian seasoning until evenly coated.

Cooking

  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • Place the seasoned eggplant slices in the air fryer basket in a single layer. Cook for about 10-12 minutes, flipping halfway through for even cooking.
