Preparation

  • Preheat your air fryer to 380°F (190°C).
  • Pound the chicken breasts to an even thickness of about ½ inch.

Breading

  • Set up a breading station with three shallow bowls: one for beaten eggs, one for breadcrumbs mixed with grated Parmesan and seasoned with salt and pepper.
  • Dip each chicken breast into the egg mixture, then coat it in the breadcrumb mixture, ensuring it is fully covered.

Cooking

  • Spray the air fryer basket with olive oil and place the breaded chicken breasts in a single layer.
  • Spray the tops lightly with olive oil and cook for 10 minutes.
  • Flip the chicken and spray again; cook for an additional 5-7 minutes until golden and cooked through (internal temp of 165°F or 75°C).

Finishing Touches

  • Spoon marinara sauce over each chicken piece and sprinkle with shredded mozzarella cheese.
  • Return to the air fryer and cook for 2-3 minutes, until the cheese is bubbly and melted.

Serving

  • Carefully remove the chicken from the air fryer and serve hot with extra marinara sauce on the side.

Notes

Pound chicken evenly to avoid uneven cooking. Customize breading with herbs and spices. Ensure chicken reaches 165°F for doneness. Allow cheese to melt completely for enhanced flavor.
