  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup melted unsalted butter
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Cheesecake Layer

  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Cookie Layer

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup softened butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

Preparation of Brownie Layer

  • Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  • In a mixing bowl, combine cocoa powder, granulated sugar, brown sugar, and melted butter. Mix well.
  • Add eggs one by one and mix until combined. Add vanilla extract.
  • Gradually fold in flour until just combined. Pour half of the mixture into the prepared pan and spread evenly.

Preparation of Cheesecake Layer

  • In another bowl, beat the softened cream cheese until smooth.
  • Gradually add granulated sugar, mixing until combined.
  • Add eggs one at a time until smooth. Add vanilla extract. Pour over the brownie layer in the pan.

Preparation of Cookie Layer

  • In a bowl, mix softened butter, granulated sugar, and brown sugar.
  • Add in egg and vanilla extract until combined.
  • Slowly fold in flour and chocolate chips. Spoon dollops over the cheesecake layer.

Final Layer and Bake

  • Pour the remaining brownie mixture over the cookie layer carefully.
  • Bake for 50-60 minutes until set. The center may jiggle, which is fine as it will firm up as it cools.
  • Let cool completely on a wire rack. Chill in the fridge for at least 4 hours before serving.

Notes

For a dairy-free version, use plant-based cream cheese and butter. For a gluten-free option, swap all-purpose flour with a gluten-free blend. Avoid overbaking for creamier texture. Ensure cream cheese is at room temperature for a smooth layer.
