  • 2 cups Medjool dates, pitted and chopped
  • 1 tablespoon baking powder
  • 2 large eggs
  • 1 cup almond flour (or regular all-purpose flour) Substitute ideas: use whole wheat or oat flour for different flavors.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line an 8-inch round cake pan with parchment paper or grease it lightly to help with easy removal later.
  • In a food processor, combine the chopped dates with a splash of water and pulse until you attain a smooth and sticky paste.
  • In a large bowl, beat the eggs and add the date paste. Mix until well combined.
  • Fold in the almond flour and baking powder until you have a smooth batter.
  • Pour the mixture into the prepared cake pan and spread it evenly.
  • Bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.

Serving

  • Enjoy it warm or at room temperature.
