  • 9 noodles lasagna noodles (whole wheat or regular) Noodles should be cooked al dente.
  • 2 cups cooked chicken breast, shredded (use rotisserie chicken for ease)
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce Check for Halal certification.

Seasonings

  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • garnish Fresh basil Optional, for garnish.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cook the lasagna noodles in a large pot of boiling water according to package instructions until al dente. Drain and set aside.
  • In a large mixing bowl, combine the shredded chicken, ricotta cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well until fully blended.

Layering

  • Spread a thin layer of marinara sauce at the bottom of a 9x13-inch baking dish.
  • Place three lasagna noodles over the sauce.
  • Spread half of the chicken and ricotta mixture over the noodles, followed by a layer of mozzarella cheese.
  • Repeat the layering process until you finish with the final three noodles topped with marinara sauce and a generous sprinkle of mozzarella and Parmesan cheese.

Baking

  • Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes.
  • Remove the foil and continue to bake for another 10-15 minutes, or until the cheese is bubbly and golden.

Serving

  • Allow the lasagna to rest for at least 5 minutes before slicing.
  • Garnish with fresh basil if desired, and enjoy your warm, comforting creation!

Notes

If you want a lighter option, consider using low-fat cheeses or adding spinach for extra nutrition. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for longer storage.
