Then transfer the mixture into the pie crust and bake for roughly 35-40 minutes until the outer parts are firm but the center still has a slight jiggle.
After taking the pie out of the oven, let it to get cooled to room temperature.
To prepare a strawberry glaze, mix together mashed strawberries, 1/2 cup of sugar, cornstarch, water, and lemon juice in a medium saucepan before cooking.
Cook the mixture while stirring continuously on medium heat until it reaches boiling point and becomes thicker. Let the mixture cool down.
Once the cheesecake has cooled, pour the prepared glaze over it and refrigerate it for a minimum of 2 hours or until the next day. Serve once set.
