Ingredients
  

  • ½ cups graham cracker crumbs
  • 3 packages of cream cheese, softened
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup fresh strawberries, pureed
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons water

Instructions
 

  • Preheat the oven to 325°F (165°C).
  • To prepare the mixture, take a medium bowl and thoroughly mix the melted butter and graham cracker crumbs.
  • After that, fill the bottom of a 9-inch springform pan with the mixture, packing it down firmly and evenly.
  • Mix the ingredients of cream cheese, 1 cup of sugar, eggs, and vanilla extract in a large bowl using a beater until a uniform texture is achieved.
  • Then transfer the mixture into the pie crust and bake for roughly 35-40 minutes until the outer parts are firm but the center still has a slight jiggle.
  • After taking the pie out of the oven, let it to get cooled to room temperature.
  • To prepare a strawberry glaze, mix together mashed strawberries, 1/2 cup of sugar, cornstarch, water, and lemon juice in a medium saucepan before cooking.
  • Cook the mixture while stirring continuously on medium heat until it reaches boiling point and becomes thicker. Let the mixture cool down.
  • Once the cheesecake has cooled, pour the prepared glaze over it and refrigerate it for a minimum of 2 hours or until the next day. Serve once set.
