Weight Watchers Hamburger Soup is a hearty and nutritious soup that’s packed with lean ground beef, fresh vegetables, and savory seasonings. It’s not heavy or overly salty either. I think it’s a perfect meal for a cozy evening, and if you’re not a fan of beef, feel free to substitute with ground turkey or chicken.

Kitchen Equipment Needed:

  • Large pot or Dutch oven
  • Cutting board
  • Knife
  • Wooden spoon
  • Measuring cups and spoons

Ingredients:

  • 1 lb lean ground beef (93% lean)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 (28 oz) can diced tomatoes, undrained
  • 4 cups beef broth (low-sodium)
  • 1 cup water
  • 1 (15 oz) can green beans, drained
  • 1 (15 oz) can corn, drained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste

Directions:

  1. Cook the Beef:
    • In a large pot or Dutch oven, cook the lean ground beef over medium heat until browned, breaking it up with a wooden spoon as it cooks. Drain any excess fat.
  2. Add the Aromatics:
    • Add the diced onion and minced garlic to the pot. Cook for about 5 minutes, until the onion is softened and translucent.
  3. Add the Vegetables:
    • Stir in the sliced carrots and celery. Cook for another 5 minutes, allowing the vegetables to soften slightly.
  4. Add the Tomatoes and Broth:
    • Pour in the can of diced tomatoes (with juice), beef broth, and water. Stir to combine.
  5. Season the Soup:
    • Add the dried basil, oregano, and parsley. Season with salt and pepper to taste.
  6. Simmer the Soup:
    • Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes, or until the vegetables are tender.
  7. Add the Beans and Corn:
    • Stir in the drained green beans and corn. Let the soup simmer for an additional 5-10 minutes, until everything is heated through.
  8. Serve:
    • Taste and adjust the seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
