If you’re looking for a light & fluffy dessert that’s not overly sweet, you’ve come to the right place.

When you make a light and airy cheesecake filling and pair it with a crisp graham cracker crust, you get the perfect no-bake dessert. The addition of a hint of lemon just sends it over the top. I’ve really been in the mood for warm weather to arrive, and this dreamy cheesecake reminds me of sunny days and picnics. Not a fan of lemon? Don’t worry, it’s still delicious without it.

  • 9×13-inch baking dish
  • Mixing bowls

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar

  • 1 package (3 ounces) lemon Jell-O
  • 1 cup boiling water
  • 8 ounces cream cheese, softened
  • 1 cup granulated sugar

  • 1 can (12 ounces) evaporated milk, chilled

Directions:

  1. Prepare the Crust:
    • In a mixing bowl, combine the graham cracker crumbs and sugar. Stir in the melted butter until the mixture is evenly moistened.
    • Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust. Refrigerate while preparing the filling.
  2. Dissolve the Jell-O:
    • In a small saucepan, bring 1 cup of water to a boil. Remove from heat and stir in the lemon Jell-O until completely dissolved. Set aside to cool slightly.
  3. Prepare the Filling:
    • In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
    • Gradually add the cooled Jell-O mixture to the cream cheese mixture, beating until well combined.
  4. Whip the Evaporated Milk:
    • In a chilled mixing bowl, whip the evaporated milk until it forms stiff peaks.
  5. Combine and Assemble:
    • Gently fold the whipped evaporated milk into the cream cheese and Jell-O mixture until fully incorporated.
    • Pour the filling over the prepared graham cracker crust, spreading it evenly with a spatula.
  6. Chill and Set:
    • Refrigerate the cheesecake for at least 4 hours, or until fully set.
