Texas Corn Nuggets are a delightfully crispy and savory snack that’s filled with sweet corn kernels and a hint of spice. They’re not heavy or overly greasy either. I think they’re a perfect appetizer or party snack, and if you’re not a fan of spice, feel free to omit the jalapeños.

They will still be undeniably delicious! If you’re looking for a light & crispy treat that’s packed with flavor, you’ve come to the right place. When you make these crunchy nuggets and pair them with your favorite dipping sauce, you get the perfect snack. The addition of corn just sends it over the top. I’ve really been in the mood for some fun and easy-to-make snacks, and these dreamy corn nuggets remind me of summer fairs and gatherings. Not a fan of spice? Don’t worry, they’re still delicious without it!

Kitchen Equipment Needed:

  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Deep fryer or deep skillet

Ingredients:

  • 2 cups fresh or frozen corn kernels (thawed if frozen)
  • 1 cup all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1 tablespoon granulated sugar

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Vegetable oil, for frying

Directions:

  1. Prepare the Batter:
    • In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, black pepper, and cayenne pepper (if using).
  2. Mix Wet Ingredients:
    • In another bowl, whisk together the milk, egg, and melted butter until well combined.
  3. Combine Ingredients:
    • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the corn kernels and chopped jalapeños (if using).
  4. Heat the Oil:
    • In a deep fryer or deep skillet, heat the vegetable oil to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  5. Form and Fry Nuggets:
    • Using a spoon or small cookie scoop, carefully drop spoonfuls of the batter into the hot oil. Fry the nuggets in batches, making sure not to overcrowd the fryer or skillet. Cook until golden brown and crispy, about 2-3 minutes per side.
  6. Drain and Serve:
    • Using a slotted spoon or tongs, remove the nuggets from the oil and place them on paper towels to drain any excess oil. Transfer to the prepared baking sheet.
  7. Serve Warm:
