Kitchen Equipment Needed:

  1. Baking sheet
  2. Mixing bowl
  3. Pastry blender or fork
  4. Rolling pin
  5. Biscuit cutter (optional)

Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 3/4 cup milk (whole milk or buttermilk)
  • 1 teaspoon vanilla extract

For the Blueberry Filling:

  • 1 1/2 cups fresh blueberries (or frozen, thawed)
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • Zest of 1 lemon (optional)

For Glaze (optional):

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk or lemon juice

Directions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it, and set aside.
  2. Prepare the Blueberry Filling: In a mixing bowl, gently toss together the blueberries, granulated sugar, cornstarch, lemon juice, and lemon zest (if using) until the blueberries are evenly coated. Set aside.
  3. Make the Biscuit Dough: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Using a pastry blender or fork, cut in the cold butter until the mixture resembles coarse crumbs. Add the milk and vanilla extract, and stir until just combined. Be careful not to overmix.
  4. Fold in Blueberry Mixture: Gently fold the prepared blueberry filling into the biscuit dough until the blueberries are evenly distributed. Be careful not to crush the blueberries.
  5. Form the Biscuits: Turn the biscuit dough out onto a lightly floured surface. Pat the dough into a rectangle about 1 inch thick. Using a biscuit cutter or a sharp knife, cut out biscuits and place them onto the prepared baking sheet, leaving some space between each biscuit.
  6. Bake the Biscuits: Transfer the baking sheet to the preheated oven and bake for 15-18 minutes, or until the biscuits are golden brown and cooked through.
  7. Optional Glaze: While the biscuits are baking, prepare the glaze by whisking together the powdered sugar and milk or lemon juice until smooth. Adjust the consistency by adding more liquid if too thick or more powdered sugar if too thin.
  8. Serve and Enjoy: Once the biscuits are done baking, remove them from the oven and let them cool slightly on the baking sheet. Drizzle the glaze over the warm biscuits, if desired. Serve the Sweet Blueberry Biscuits warm and enjoy!
