Ingredients:
For the Biscuits:
- 2 cups all-purpose flour

- 3/4 cup milk (whole milk or buttermilk)

- 1 tablespoon lemon juice
- Zest of 1 lemon (optional)
For Glaze (optional):
- 1/2 cup powdered sugar
- 1-2 tablespoons milk or lemon juice
Directions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it, and set aside.
- Prepare the Blueberry Filling: In a mixing bowl, gently toss together the blueberries, granulated sugar, cornstarch, lemon juice, and lemon zest (if using) until the blueberries are evenly coated. Set aside.
- Make the Biscuit Dough: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Using a pastry blender or fork, cut in the cold butter until the mixture resembles coarse crumbs. Add the milk and vanilla extract, and stir until just combined. Be careful not to overmix.
- Fold in Blueberry Mixture: Gently fold the prepared blueberry filling into the biscuit dough until the blueberries are evenly distributed. Be careful not to crush the blueberries.
