Kitchen Equipment Needed:

  1. Large pot or Dutch oven
  2. Wooden spoon or spatula
  3. Knife and cutting board

Ingredients:

  • 1 pound ground beef
  • 1 onion, diced
  • 2 bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped fresh parsley

Directions:

  1. Brown the Ground Beef:
    • In a large pot or Dutch oven, cook the ground beef over medium heat until browned, breaking it apart with a wooden spoon as it cooks.
  2. Saute the Vegetables:
    • Add the diced onion and bell peppers to the pot with the browned beef. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
    • Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  3. Add the Tomatoes and Broth:
    • Pour in the diced tomatoes (with their juices), tomato sauce, and beef broth. Stir well to combine.
  4. Season and Simmer:
    • Add the cooked rice and Italian seasoning to the pot. Season with salt and pepper to taste.
    • Bring the soup to a simmer, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes to allow the flavors to meld together.
  5. Serve:
    • Ladle the Stuffed Pepper Soup into bowls. Top each serving with shredded cheese, a dollop of sour cream, and chopped fresh parsley, if desired.
    • Serve hot and enjoy this comforting and flavorful soup with crusty bread or crackers on the side.
