Ingredients:
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
For the Cheesecake Filling:

Directions:
- Preheat the Oven: Preheat your oven to 325°F (163°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides to lift the bars out easily.
- Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the prepared baking pan to form an even crust. Bake for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
- Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy. Add the sugar and beat until well combined. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until smooth and well combined.
- Assemble the Cheesecake Bars: Pour the cheesecake filling over the cooled crust and spread it evenly with a spatula. Bake in the preheated oven for 40-45 minutes, or until the center is set and the edges are lightly golden. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Prepare the Strawberry Topping: In a medium saucepan, combine the sliced strawberries, sugar, lemon juice, cornstarch, and water. Cook over medium heat, stirring frequently, until the mixture thickens and the strawberries are softened, about 5-7 minutes. Remove from heat and let it cool completely.
